Sweet Corn Fried Rice

So last weekend was like a cookery carnival at home since mum was away. I made a Fried rice with stir fried veggies for lunch. I love Chinese food and enjoy dishes with tofu. Here is the recipe for the rice









Ingredients
Sesame seeds : 1 teaspoon
Chopped bulbs of spring onion : 1 cup
Garlic pods :4 diced
Ginger1 inch stick diced
Green chilly : 1 chopped up
Diced carrots : 1 cup
Steamed corn : 1 1/2 cups
Diced Capsicum: 1 cup
Cooked rice : 2 1/2 cups ( ideally left over rice from the fridge works wonders)
Soya Sauce : 2 teaspoons
Vinegar : 2 teaspoons
Salt : to taste
Pepper powder :1 teaspoon
Oil : 2 teaspoons
Spring onions : chopped up to garnish

Method
Heat oil in a wok and add the sesame seeds
Now add the chopped bulbs of spring onion and saute for a bit
Next add the chopped ginger+garlic and chillies and let it cook a bit
Then come the carrot and capsicum. Leave them for about a minute
Finally add the sweet corn. If you like the vegetable a lot then you could always add more Now add the soya sauce and vinegar and let it simmer for 30 seconds .
Then add salt Finally tip in the rice and sprinkel the pepper powder all over
Cover with a lid and let it cook for 2-3 minutes on a low flame
Garnish with spring onions and your all set to go
This is very very basic and I always keep making additions. For eg: I do this with only tofu sometimes or with only baby corn and so on. Unfortunately I am a little restless today and therefore dont feel like blogging about the stir fried veggies. I will do so as soon as the cook in me comes back to normal .
