Day 4 : Potato and Tofu cutlets with mint chutney sandwiched between bread
After my brief hiatus and romance with different cuisines I come back to the self imposed challenge that seems to be getting a little boring by the day. So to infuse the enthusiasm back into me , I chose to make a personal favorite which is not really a sandwich but can be considered one. Warning : The preparation of this dish requires some patience !
Ingredients

Thats the
fully made cutlet/tikki

Tofu : 1 cup grated
Boiled and mashed potato : 2 cups ( preferably cold , meaning boil it and let it cool down and then stick it in the fridge for a couple of hours so you can work with them easily )
Onion : 1 small finely chopped
Green chillies : 1 small finely chopped
Cumin : 1 teaspoon
Coriander leaves : 2 tablespoons finely chopped
Corriander powder : a pinch
Red Chiilie powder : a pinch
Salt : To taste
Method
Take the grated tofu separately in a bowl. To it add onions and all the ingredients except for the potato and mix
Finely grate the potato and mash it to ensure that it has no lumps
Make small balls of the tofu mixture
Make bigger balls of the potato mixture
Stuff the tofu mix in the centre of the potato mixture and shape it into cutlets leave it in the fridge to set
Shallow fry in a pan on medium flame with oil
* Since you are freezing the tikkis , ensure that they get cooked properly on the pan.
Sprinkle chat masala once done , again completely optional
Pudina Chutney
Ingredients and Method
Corriander Leaves : 3 cups
Pudina leaves : 1 cup
Green chillies : 1-2 , depending on your ability to tolerate spice
Coconut : 2 tablespoons grated
Ginger : 1/2 inch stick peeled and chopped
Garlic : 4 peeled pods
Lemon : juice of one lemon
Salt : to taste
Suger : a pinch
Grind all ingredients excluding the lemon juice to a fine paste with very little water. Empty the chutney into a bowl and rinse the blender with lemon juice and add this to the chutney. Add water if you find it too thick
Assemble the sandwich by placing two tikkis in between two slices of bread with some chutney on each tikki. You could add some cut onions as well to this.
