The 7 day Sandwich Challenge

Day 3: Tomato and bell pepper sandwich served with a cucumber , peanut salad *

* This is not an original recipe , but one that I have eaten and built on .

SANDWICH 

Ingredients
Tomato : Half a medium sized tomato finely diced
Onion :Half a medium sized onion finely diced
Red and Green pepper : one small bowlful finely diced
Green chillies : a one inch piece chopped up finely
Corrainder leaves : small bunch , chopped up fine
Red Chilly powder : a pinch
Turmeric powder : a pinch
Roasted Cumin Powder: a pinch
Salt : to taste

Method
Mix all the veggies in bowl
Add all the spices and mix
If you intend to make the sandwich after a while then stick the mix in the fridge . The fact that there is salt will make the vegetables water and the mix will become soupy in nature
Stuff in between bread and toast

SALAD 

I tasted this salad for the first time at a restaurant called In the Pink  located in Bangalore during a vegan buffet and loved it . Here is how I recreated it

Ingredients
Cucumber : 1 small halved and chopped up with the peel
Peanuts : 2 tablespoons ground coarsely
Coconut shavings : 2 tablespoons
Lemon juice : Of half a lemon
Salt : to taste

Method
This is a no brainier : Mix all the ingredients and tada , the fastest salad ever created :) ... enjoy
