Ragi Rava Dosa

Given that I am not into elaborate recipes at the moment, my quick fix Ragi Rava Dosa, is a go to, when I crave a homemade brekkie but have not planned ahead as I would for Idly or Dosa. The only pre-requisite is the need to have a stock of onion chutney in the fridge.

Ingredients
Ragi Flour : 3/4 Cup
Rava: 3/4 Cup
Rice Flour: 1/2 Cup
Gram Flour:1/4 Cup
Salt: to taste
Onions: One big, thinly sliced
Curry leaves: 8-10, roughly chopped
Coriander Leaves: 1 small bowl, finely chopped
Cumin seeds : two teaspoons, crushed by hand

Mix the ragi, rice, gram flour along with the rava using a laddle
Add the crushed cumin seeds, onions, curry leaves and coriander leaves to this mix and knead the dry mix well with your hands. This will ensure that the flavors blend well
Add salt to the mix along with water
You are looking for a non-lumpy runny texture for your batter
Once ready , heat the griddle and pour the batter over the griddle to make some crisp yummy dosas
*Note: You might want to experiment with the quantity of flours indicated above. Depending on where you typically source your ingredients from, you might want to try different combinations.
