The 7 day Sandwich Challenge


Day 2 : Tofu and Potato sandwich ( Serves one with a little extra stuffing)


Ingredients
Cumin : 1/2 teaspoon
Oil : 2 teaspoons
Onion : 1 medium sized , chopped and rinsed in water to get rid of any strong flavor
Ginger : Half inch stick chopped
Green Chilly : 1 medium sized chopped
Salt : to taste
Corrainder Powder : 1/2 teaspoon
Roasted cumin powder : 1/2 teaspoon
Dry Mango/ Amchur powder : A pinch
Garam Masala : A pinch
Boiled potato : 1/2 a potato boiled and cubed
Tofu : 1 cup cubed ( 10-15 1/2 inch cubes )
Coriander leaves : Finely chopped

Method
Heat oil in a pan and add cumin when the oil is hot
Grind the onion , chilly and ginger to a coarse paste
Add the paste into the hot oil and saute till the raw smell disappears
Now add the salt and all the masalas and saute for a minute
Add the tofu and keep sauteing for 3-4 mins till it turns golden brown
Add the coriander and  mix it well
Finally add the diced potato's
I love sour food so I add some lemon to this mix , completely a matter of choice
Stuff into bread and toast
